Cottage Cheese Puffs

Ingredients:

– 1 1/4 cups all-purpose flour, plus more for sprinkling – 3/4 teaspoon fine salt – 1/2 cup (1 stick) cold Real California unsalted butter, cut into 1/2-inch pieces – 1 cup Real California cottage cheese – 1 teaspoon dried rosemary leaves, plus more for sprinkling – Coarse or flaked salt, for sprinkling (optional) :Biscuits

Directions:

Prep time: 25 minutes

Cook time: 10 minutes

Preheat the oven to 450°F. Line two large cookie or baking sheets with parchment.

Meanwhile, in the bowl of a food processor, combine flour and fine salt. Add butter and pulse until mixture resembles a coarse meal. Add cottage cheese and rosemary and pulse until mixture begins to come together.

Transfer mixture to a lightly floured work surface and knead a few times to form a dough. Roll dough to 1/4-inch thick and sprinkle with rosemary and coarse salt, if using, lightly pressing them in. Use cookie cutters or a sharp knife to cut into shapes.

Transfer to the prepared cookie or baking sheets and bake until golden brown, about 10 minutes.

Yield: Approx. 3 dozen, 2-inch puffs
