Green Chile Cottage Cheese Queso



– 1 (16-ounce) container Real California cottage cheese – 1 cup shredded Real California Pepper Jack cheese – 1 teaspoon taco seasoning – 1 (4.5-ounce) can chopped green chiles, drained – 1/2 small red onion, finely chopped, for garnish – Chopped fresh cilantro, for garnish – Tri-color corn tortilla chips, or yellow corn tortilla chips, for serving Pepper Jack, Queso

Cook time: 5 minutes

Add cottage cheese to a blender and blend, scraping down the sides as needed, until smooth, about 30 seconds.

Combine cottage cheese, shredded cheese and taco seasoning in a small cast-iron skillet over medium heat. Cook over medium heat, stirring frequently, until cheese is melted, about 2 to 4 minutes. Stir in green chiles until combined.

Top queso with red onion and cilantro. Serve with chips and enjoy.

Tip: Substitute Real California Cheddar for Real California Pepper Jack cheese.
