California Walnut & Blue Cheese Balls



– 8 ounces California cream cheese, softened – 8 ounces California blue cheese, crumbled – 1/4 teaspoon fresh garlic, minced – Pinch of salt and freshly ground black pepper to taste – 1/2 cup walnuts, toasted and chopped – 1/3 cup fresh curly parsley, chopped fine snack

Makes 32 cheese balls

Combine cream cheese, blue cheese, and garlic in a medium bowl. Mix until well combined. Season the mixture with salt and freshly ground pepper to taste. Line a sheet tray with parchment paper. Drop teaspoon sized balls onto the paper lined tray. Cover with plastic wrap and refrigerate for 1 hour. Moisten hands with water and roll into balls. In a small bowl combine the chopped walnuts and parsley. Roll each blue cheese ball in the walnut parsley mixture. Serve with buttery crackers, crostini or celery sticks.
