Place cornstarch in a shallow bowl and set aside.
In a large skillet over medium heat, warm oil. Working in batches, dredge cheese slices in cornstarch, shaking off excess, and cook until golden brown, about 1 1/2 minutes per side. Serve immediately. Serves 6.
Notes: You can substitute queso de freir for the panela.
Queso frito is delicious alongside eggs for breakfast and can be enjoyed any time wrapped in a warm corn tortilla.
