California Cotija Cheese & Protein Powerhouse Salad



Dressing: – 2 tablespoons fresh lime juice – 2 tablespoons extra-virgin olive oil – 2 tablespoons Real California sour cream – 1 teaspoon honey – 1/2 teaspoon ground cumin – Salt and pepper to taste Salad: – 2 cups mixed greens (spinach, arugula, and kale) – 1/2 cup sliced cucumber – 1/2 cup halved cherry tomatoes – 1/4 cup canned black beans, drained and rinsed – 1/4 cup shredded roasted chicken breast – 1/4 cup corn kernels (fresh or frozen, thawed) – 1/4 cup thinly sliced red onion – 1/4 cup diced red bell pepper – 1/4 cup diced roasted sweet potatoes – 1/4 cup crumbled Real California Cotija cheese Cotija, Hispanic Dairy, Protein

To make the Dressing: In a small bowl, whisk together lime juice, oil, sour cream, honey, and cumin. Add salt and pepper to taste and set aside.

To make the Salad: Arrange greens in a large shallow bowl. Top with cucumber, tomatoes, beans, chicken, corn, onion, pepper, and sweet potatoes. Sprinkle with cheese, then drizzle with dressing. (Alternatively, combine salad ingredients in a medium mixing bowl and toss with dressing.)

Serve any remaining dressing at the table.
