California Manchego and Cranberry Bites with Sweet Crema



– 1 (17.3 ounce) package puff pastry sheets, thawed – flour for dusting – 1 (10 ounce) wheel Real California Manchego cheese, sliced in ½-inch cubes – 1 cup cranberry sauce – ½ cup roasted and salted pistachios, chopped – 1 cup Real California Crema Mexicana – 1 ½ tablespoons confectioners’ sugar – ½ teaspoon vanilla extract :Crema, Manchego, Pistachios, Nuts, Cranberry, Holiday, Hispanic Dairy

Preparation time: 20 minutes

Cooking time: 30 minutes

Preheat oven to 400°F. Spray a (24 cup) mini muffin pan with non-stick cooking spray. Set aside.

Dust a working surface with flour and roll out one sheet of puff pastry. Cut out 20 squares and line each mini muffin cup with dough square. Press, lining the bottom and up the sides of each cup. Pierce 2-3 times at the base with fork. Bake for 10 minutes. Remove from oven. Working quickly, place a cheese cube and a tablespoons cranberry sauce in each puff pastry. Return to oven and bake for 5 minutes or until cheese melts. Transfer to a wire rack on a baking sheet to cool. Repeat second batch with second puff pastry sheet.

Whisk together crema, sugar and vanilla in a medium bowl. Drizzle over Manchego and cranberry bites. Sprinkle with pistachios. Arrange on a tray and serve.
