Place eggs in a large saucepan filled with cold to cover them by 1 1/2 inches and place over high heat. Bring the water to a boil, then reduce temperature to medium heat and simmer for 10 minutes.
Drain the eggs and chill them in cold water for one minute. Carefully peel and halve the eggs. Using a teaspoon, scoop yolks into a separate bowl and set aside.
In a food processor, combine egg yolks, cheddar, mayo, sour cream, pimientos, garlic, paprika, pepper, and salt. Blend until smooth. Transfer pimento cheese to a piping bag fitted with a star nozzle.
Place egg white halves on a serving platter. Pipe pimento cheese into egg white halves. Garnish with chives and sprinkle with paprika before serving.
