Roasted Cheesy Cotija Potatoes

Ingredients:

– 1 pound baby new red potatoes* – 4 tablespoons unsalted Real California butter, melted – 1 1/2 teaspoons taco seasoning – 1/2 teaspoon kosher salt – 1/4 teaspoon freshly ground pepper – 1/2 cup Real California Cotija cheese, grated – 3/4 cup Real California sour cream – 1/2 tablespoon chives, chopped *If you can’t find new red potatoes, try baby Yukon gold potatoes or fingerling potatoes. :Cotija, Crispy Potatoes, Hispanic

Directions:

Prep Time 15 minutes

Cook Time 25 minutes

Preheat oven to 425°F.

Cut potatoes in half and score them about 1/4-inch-deep in a diamond pattern (crosshatch). Set aside.

In a large bowl, toss potatoes, half of melted butter, seasoning, salt, and pepper together.

Brush remaining melted butter over a 13x9 inch baking sheet. Sprinkle 6 tablespoons of cheese over butter.

Arrange potatoes cut sides down on baking sheet in a single layer. Sprinkle remaining cheese over potatoes.

Bake for 25 minutes until potatoes become fork tender. Remove from oven and let potatoes rest for 5 minutes.

In a small bowl, add sour cream and top with chives. Transfer potatoes to serving platter and serve immediately with sour cream.
