Ingredientes:

Para la envoltura: – 1 taza de requesón Real California – 1 huevo – 1/4 cucharadita de mezcla de condimentos (o una pizca grande de ajo en polvo, pimentón y pimienta negra) Para el relleno: – 1 1/2 cucharadas de mantequilla sin sal Real California, cantidad dividida – 1 oz de queso Cheddar suave Real California, rallado – 2 huevos – 1 cucharada de leche entera Real California – Una pizca de sal kosher – 1 cucharada de cebollino picado – 1 rebanada de tocino cocido de corte grueso – 1/4 aguacate, rebanado – 1/2 taza de hojas frescas de rúcula – Salsa picante, para server :proteína, requesón, requeson

Precalienta el horno a 350°F. Forre una bandeja para hornear con papel pergamino y cúbrala con 1/2 cucharada de mantequilla.

Con un procesador de alimentos pequeño o una batidora de mano, combine el requesón, el huevo y la mezcla de condimentos y mezcle hasta que quede suave. Vierta sobre el pergamino preparado, usando una espátula para extender suavemente la mezcla hacia los bordes, creando una capa rectangular delgada y consistente sin hoyos. Hornee durante 25 minutos, hasta que los bordes estén dorados y la envoltura se pueda despegar fácilmente del papel. Retirar del horno, untar 1/2 cucharada de mantequilla para que se derrita y luego espolvorear un lado con el queso cheddar.

Mientras la envoltura se enfría, prepare el relleno derritiendo la cucharada de mantequilla restante en una sartén a fuego medio-bajo. Batir los huevos, la leche entera y la sal kosher y verter en la mantequilla derretida. Deje cocinar, sin tocar, durante 2-3 minutos, luego doble suavemente el huevo y cubra la sartén para terminar de cocinar los huevos, otros 2-3 minutos.

Coloque los huevos preparados sobre el queso derretido en la envoltura, luego cubra con el cebollino, el tocino, el aguacate y la rúcula fresca. Doble suavemente el borde cercano de la envoltura sobre los rellenos, luego enrolle hasta el borde más alejado; la masa quedará delicada, así que tenga cuidado de evitar que se rompa.
